The Dry Shake is an essential mixology technique, ideal for creating an airy foam and a velvety texture. Here's how to make a cocktail worthy of the greatest bars.
1️⃣ Dry Shake – The perfect emulsion (without ice)
Before cooling the cocktail, the ingredients must be mixed well.
In a shaker, add:
- 5 cl of gin
- 2 cl of freshly squeezed lemon juice
- 1.5 cl of raspberry syrup
- 1 egg white
💡 Shaking without ice helps incorporate air and create a nice emulsion.
2️⃣ Shake with ice – The cooling step ❄️
Add a large handful of ice cubes to the shaker and shake vigorously for 15 seconds .
💡 Listen to the sound: it becomes heavier and more fluid when the mixture is very cold.
3️⃣ Double Filtering – A smooth and refined texture
To remove residue and achieve a silky texture:
- Place a Hawthorne strainer over the shaker.
- Pour the mixture through a fine strainer directly into a cocktail glass.
4️⃣ Dressage & Service – The art of presentation
Let stand for a few seconds until a light foam appears.

The story
This cocktail is named after the Clover Club , a private club founded in Philadelphia in the 1880s . The club brought together influential writers, lawyers, businessmen, and journalists who met at the Bellevue-Stratford Hotel , a luxurious hotel of the time. The Clover Club Cocktail was their signature drink, appreciated for its balance of sweetness and acidity, as well as its silky texture provided by the egg white.
In the 1920s , this cocktail was very popular in the United States and Europe, especially among gin lovers. However, with the advent of Prohibition (1920–1933) , many classic cocktails were eclipsed by simpler, more accessible drinks, and the Clover Club began to fall into obscurity.
In the 1950s and 1960s , it was considered a bit of an outdated cocktail, often relegated to "women's" drinks due to its pink color and frothy texture.
With the resurgence of interest in classic cocktails and the rise of craft mixology in the 2000s , the Clover Club has regained its place among the must-sees. It was given a major spotlight by the Clover Club bar, opened in 2008 in Brooklyn, New York by renowned mixologist Julie Reiner . This bar specializing in classic cocktails helped put the Clover Club back in the spotlight.
Today it is considered a great gin classic , appreciated for its harmonious combination of tangy and fruity flavors, as well as for its elegant presentation.
