Le rhum qualifié de blanc est un spiritueux obtenu à base de jus de canne ou de mélasse fermentés. La solution obtenue suit ensuite un processus de distillation au bout duquel le taux de concentration d'alcool et de composants aromatiques augmente.

Selon le processus de distillation utilisé (continue, discontinue, en alambic, en colonne simple ou multiple), on obtient un distillat de 65 à 95° qui permettra de produire le rhum blanc.
